Coffee has a long journey that it follows. Form the bean to the shelf, coffee will go through some amazing things to get to that final destination. You may take for granted that the coffee you buy off the shelf was some beans ground up from somewhere warm. However, there is much more to it than that. The process of collecting, roasting and grinding coffee beans is an art. It is complex and there are many variables. It should be taken very seriously. In fact, coffee is only second in value next to petroleum.
It all starts with the plant. There are literally hundreds of different types of coffee plants. They are grown all over the world and beans form different areas are different in flavor and appearance. Many are processed in a different manner too. In fact, some processing methods can create different coffee from the same type of bean. With all these variables it is easy to see why there are so many different types of coffee on the market. Most beans are hand picked. They are hand separates and sorted. Coffee beans actually grown in fruit. The fruit has to be removed through a soaking process. They are then dried in the sun. After they are dry, bad beans are separated out and the others are left to age.
Following the aging process the process of roasting begins. The beans are roasted at very high temperatures using special machines. They change color during the roasting process to become the familiar brown color. There are many different roasting techniques. After roasting the beans are packaged.
Beans can then be sold as whole beans or are sent to places where they will be ground. Grinding can be done in different ways and the method and amount of grinding will produce different types of roasts. Some are hand ground while others are ground by machine.
Of course the end result is brewing. You will do that at home or it will be done in a restaurant or shop. The brewing is the last step and there are many different methods of brewing as well. How one person brews their coffee could create a different taste than how someone else brews the same coffee. Additionally, serving it can be done in a variety of ways, as well.
Coffee is a very diverse product. There are so many variables to producing the different types of coffee, from the beans to the brewing. It is all about how the process is done. Yu can now easily see why coffee is such an art form and how it can be considered complex. Coffee makers also play a role in the taste of your coffee.
It can be along journey for the coffee bean to go from being picked in a field to ending up as your morning beverage. It is a long journey, but one full of many twists and turns that are different for each bean.

How To Make Pickles

Since long ago pickling has been done in homes for preserving fruits and vegetables. The earliest form of preserving food is considered to be pickling. Preserving fruits and vegetables longer from the use of salt, sugar and vinegar is something early man discovered. Hence, through the process of pickling food he discovered how to make pickles easily.
Being crunchy and having a wonderful taste is the most important aspect of making pickles. For this salt is the most important ingredient and not any ordinary salt. For pickling purposes a special pickling salt is used. Moreover, when selecting the fruit or the vegetable to be pickled, care has to be taken that it is fresh, about medium sized and a bit thick skinned in case of limes.
In making pickles some of the equipment that is required is generally the same for all pickles. The fruit and spices is what varies. The equipment includes jars with lids, pickling salt, fruit or vegetables to be pickled, spices such as mustard seeds, cumin seeds, allspice, cloves, garlic, etc, oil, vinegar, water bath, etc. Hence, several different types of pickles can be made. Explained below is how to make cucumber pickles.
Wash the cucumbers well and remove the top and the bottom of each of them. Slice the cucumbers. Place them in a sink or tub. Add salt to it. After about 2 hours remove the cucumbers and discard the liquid. In a large cooking pot, mix well mustard seeds, vinegar, sugar, water, and other ingredients mentioned as per the specific recipe. Put the cucumbers in sterilized jars and pour the hot mixture over them leaving just half a centimeter space at the top. Place the jars in boiling water for about 10 minutes for further process. Store in a cool and dark place for about 2 months and then the pickle is ready to consume.
Another kind of pickle is sweet pickles. They are made with almost the same ingredients as a cucumber pickle except that the quantity of sugar used is much higher in sweet pickles.
How to make pickles with lime? The ingredients used for lime pickles are lemons, sugar, salt, spices, oil, chili powder and ginger. Making these kinds of pickles is a very easy job. Cut in quarters are the lemons. Mixed well in a cooking pot all the other ingredients. Boil the mixture. The mixture is added to and the limes are added to sterlized jars. The pickle is ready to consume in a period of 8 weeks.
The ingredients may change, but pickles recipes in general are very easy and simple to make. Hence, a number of variations can be easily tried while making pickles. Home Roasts Rather than Nearby Coffee Shops

To achieve a good roast you have to start with beans that have been skillfully selected and dried.
Some bean processors use a wash to remove the fleshy fruit from the bean and to separate different kinds of beans. Beans will each have a different density, and it is this difference that causes some beans to float at a higher level making it easier to remove or separate these beans. Others use a slower, more expensive dry-process.
Beans undergoing a dry process will result in a more subtle acid profile. The acidic nature of beans that have gone through a wet process is far more evident and, in fact, more noticeable to the coffee drinker, but a certain level of acidity is desirable. Otherwise, you will have a dull, flat cup of coffee.
As the beans are heated during the roasting process, a variety of aromas and acids are produced in different concentration levels, along with other flavor compounds also produced. This is similar to when you brew it in your own saeco coffee maker.
The beans take in the heat and the green beans slowly dry to a yellowish color during the first stage. Green beans are actually raw or unroasted beans, as opposed to being the color green. Properly roasted beans should have an aroma like popcorn or toast.
At around 338?-392? Fahrenheit the moisture enclosed in the bean?s skin assists the sugars in the bean with their caramelization process. This is one reason why it is important for beans to have the correct moisture content which is a result of proper drying. Caramelized sugars are not as sweet so attaining the proper moisture amount is an important factor in the quality of the final brew.
Around 400? Fahrenheit, beans become a light brown color and begin to expand to almost double the original size. They also lose nearly five percent of their original weight, then to lose an additional thirteen percent as the temperature rises slightly to 428? Fahrenheit. It is also around this time that the beans release some CO2.
Once the temperature rises to an approximate 446? Fahrenheit, the roasting beans turn to a medium-dark brown color and take on an oily appearance. It is not uncommon to hear a loud popping sound from the beans during this second stage.
Roasters must be careful to not overdo it at this stage in the process due to erratic aromatic compounds that boil off as the oils on the outer coat of the bean can combine with oxygen. If this occurs, the bean can be stripped of its distinct flavors and be replaced with a burnt taste.
The goal is to produce the perfect balance of acidity, bitterness and other coffee attributes making up the final profile for that brew. Body is one term often used by coffee connoisseurs to describe a coffee profile. Although one would think the ?body? refers to the thickness of the coffee, this characteristic actually results from the fibers and types of proteins in the brew and refers to the feel on the tongue when rubbed against the top of the mouth. The body of the brew results from the drink?s fat content which is largely determined by the roasting process, in addition to other conditions home roasters really cannot control.
A roast that is too light will leave too high of a concentration of bitter compounds, whereas too dark of a roast will result in a final product that is far too chocolaty and burnt in taste. The point is to experiment until you find your preferred balance and taste, and if that doesn?t work there is sure to be a nearby coffee specialty shop that has just the right brew for you!

I’m fortunate enough to have lived in San Diego much of my life. I’ve traveled over seas many times, but always come back. Why? Because there is so much to do. If you are going to be visiting, here are some ideas to keep you busy and happy.
Viva la Mexico! San Diego sits on the border with Tijuana just to the south. TJ, as it is known, is a lot of fun. Unfortunately, there has been a lot of drug crime lately, so make sure to check with locals on that status before heading down.
When it comes to partying, San Diego has a vast collection of locations that cater to everyone. One of the best is Lahaina’s in Pacific Beach. Picture an outdoors deck facing the boardwalk and beach with plenty of beer and you have the right idea.
Just trolley it baby! San Diego has installed a trolley system that runs through parts of the county. Throw away your schedule of things to see. Just jump on the trolley, get off when you like and do some exploring. We’re friendly people.
Love a good slab of meat? Prime rib specifically? Try Bully’s in Del Mar. This dingy bar/restaurant has been a famous gathering place for years for locals looking for prime rib that is simply mouth watering.
Given its location, you probably will not find it surprising San Diego is known for its Mexican food. Everyone has their favorite place, but some of the best are in Eden Gardens within Solana Beach. Authentic and inexpensive. Give it a try.
Looking to do a bit of dancing. From the Tango to line dancing to whatever is hot, one needs look no farther than downtown San Diego. Head over to E street and prepare to burn off dinner with some seriously fun gyrating.
Looking for something really different? How about bull fighting? They don’t allow it in San Diego, but you can hop across the border and catch it in Tijuana. The bull ring is located on the coast to the west of the city.
From golfing to hang gliding to just about anything you can think of, San Diego has it. Drive, fly, take a train or walk to San Diego and you will be happy you did at the end of the trip. In fact, many people never actually go home.
Coffee Is A Luxurious Pastime To Indulge In

The fact that frequently results are as good as pros and roasting coffee beans is even easier will result in happy home wine makers!
Although, even a popcorn popper or a frying pan can be used there are range of roaster types which are available. Though, you must be certain to begin with extremely clean equipment. Left over butter or fish oils can ruin the coffee taste.
Compared to the lighter roasts, dark roasts lack the acid taste and contain lesser caffeine. Of course, be sure to begin with superior beans.
You must be ready for a bit of smoke as the beans will have to be heated between 460F and 530F. Either with a stove top exhaust or a small room fan you can easily manage that part. Probably, with no one home and the windows open is how your first experiments must be done as there will be an odor beyond the smoke too.
The heat must be turned up after the beans are put in the roaster! (Those over-sensitive fire alarms at home should be taken care of and be temporarily disabled.)
The thermometer is built into some roaster models although for those frying pan experiments or for when it’s open you may want to have an extra. For this purpose thermometers used for candy making work well.
The beans will turn brown from yellow during the process. The individual choice about your liking of how dark your roast should be depends on how brown it can get.
When it bursts a loud crack will be heard by you as both water and oil moisture heat up putting a pressure on the bean surface. This is normal and there is nothing to worry. After the heating progresses for four to seven minutes you can hear for every 30 seconds or more this stirring.
As the roasting continues the inside sugar will start to caramelize (burning slightly and turning brow). The matter of taste is what the degree depends on. For every 30 second or so the color must be checked.
Occasionally a second loud crack will happen if for long enough the roasting continues. A little overdone for some palates and quite dark beans will develop at this stage. Boiling the sugar away while simple burning the beans is what you are doing if you continue beyond the second crack. For most the outcome will be too harsh.
Agitate after in a metal colander you have poured to cool. Some method for removing the produced chaff (as the beans are agitated the fine skin that detaches from the bean) during the roasting process may be wanted by you. One option is the mesh cooking screens.
See that the beans are not clinging to the surfaces by stirring them to move them around by being sure to get one that allows you that in case you want the roasting style to be popcorn popper. A cast iron skillet works superbly for the stove top style. Get ready for lots of viewing and stirring. Rapidly the roasting occurs!
Canning for Beginners

Are you the type of person who likes to do things the old fashioned way? I mean by holding onto the traditions, and knowing how things were done before we advanced beyond these stages. Then let me introduce you to canning for beginners. This is one of the most rewarding hobbies that anyone could possibly do. You can learn how your grandparents preserved food for the winter. All you need to have is a pressure cooker, some canning jars/w lids, some food that you would like to try to preserve and the desire to do it. Cooking under pressure will trap steam from the boiling water in order to reach the temperature it needs to kill bacteria and make it possible to preserve your foods.
For starters, it is best to start out with a boiling water method. This is the most frugal way to learn how to can and you will be proud of your efforts when done. You will need some canning jars, lids, both pints and quarts, which are pretty standard sizes for canning tomatoes, pickles, and other fruit. Small 8 oz jars are good for preserving items such as relish and jellies. They come 12 to a box and have lids for each one. These jars are tempered for canning and therefore it is not recommended to use any other jars, such as a mayonnaise jar, or a jar that has previously had other product in it.
You will also need a very large pot with a lid that is deep enough to cover the jars to be canned by at least one inch, and two inches would be even better. You should also have a rack to place the jars in to keep them off the bottom. If you didn’t get a rack with your pot, you may simply place a rack in the bottom of the pot to keep the jars from touching the bottom. Another instrument that you will need is plastic knife or spatula to stir the filled jars and release any trapped air. And a large mouth plastic funnel, and a set of strong, long handled jar pullers for taking the hot jars out of the water. You will need a dish towel to dry any water off of the jars as you take them out of the pot.
Always use the freshest fruits possible, and wash and peel the fruits before you begin the cooking process. While you are preparing your food for cooking, you should put some jars into water and let it come to a boil for a few minutes. Then place the food into the hot jars filling about about an inch from the top. There’s a good product called Fresh Fruit that is recommended to prevent fruit from discoloration. Read the directions to get the recipe for a sugar water syrup that’s either light, medium or heavy your choice. Pour this syrup over the fruit. Run your wood spoon or spatula through the food jars releasing any trapped air. Remove any other food from the outside of the jars, put your lids on and tighten them down. Place the jars back into the pot and fill with warm or hot water and place back on the stove. Be sure to cover the jars about an inch over the lids.
Turn the stove on high with with the jars loaded into the canning pot. Once you have reached a vigorous boil, let it continue to boil for the time limit in your recipe, but the usual is about 10 minutes for pickles, 25 to 30 minutes for fruits, and 35 to 40 minutes for tomatoes.
When they have been cooked for the prescribed time, turn the heat off and put the jars using your tongs, on a towel to drip dry and to cool overnight. Before leaving the jars to cool check each jar to make sure there are no lids raised up in the center. This is an indication that the jars of food are no good because they did not seal. If this is true, you can either refrigerate (once they cool) and use those immediately, or try again using a new jar and lid. Try wiping the lid of the jar with a clean towel before screwing on new lids to try to reseal.
There nothing like the feeling you get once you master the art to preserve food. It is helpful for anyone that loves to learn how things were done by our ancestors, and brings us back to our roots.
